Walking at the Organic event in Zwolle 2011 and visiting all those stands, talking
to people and eating small organic local food bites brought by local farmers, I felt
dehydrated.
Desperatly looking for some water, I got my eye on little stand right at the back
of the exhibition hall, saying: Slow Juice
Over looking the crowd I recognized my collegue from Thailand: Joost
Duisterwinkel, founder of the Slow juicer namend ‘ Versapers’ .
Slow juice is a unique method of juicing your veggies & fruits, while keeping all
the nutrients and vitamins alive. Most juicers have a powerful and quick engine,
squeezing the juice very fast out of the fruit or vegetable, yet ‘ burning’ all the
vitamins and minerals due to the heat and pressure.
Joost, a fan of the fresh delicious treats that nature gives to us, found out there
was a different way, to maintain the vitality in your juice by using a slow rotating
engine.
You can see the difference when you see the juices that have been squeezed by
a normal processor, they dissolve very quickly, leaving you with only water &
sugar rather then vitamins & energy.
Joost makes me a ‘Green cappuccino’ which looks definitely like a cappuccino
with all the natural foam! It tastes delicious, he lets me guess whats in it. I taste
apple but also a bit of lime. He tells me its a mix of the powerful and healthy dark
vegetable Kale, green apple, lime, celery & fennel. I cant believe i just drink so
many veggies in one and so delicious!
I can imagine people that dont have time to eat well or kids that dont like
veggies, drinking this juice like crazy!
The machine is very light, nice design and so easy to use. I can imagine
professionals like bartenders or chefs using the slow juice method to have
maximum taste, colour and vibrance in their creations.
I would say if you have a chance try the green cappuccino at home, see the recipe
below, enjoy!
Basic Green Cappuccino serving 2 glasses:
* 2 granny smith apples
* 100 gr. Kale
* ¼ lime
* ¼ fennel
Chop the apples in 4, you dont need to peel the apples as all the vitamines are in
the skin. Chop the kale leaves or buy already chopped Kale. Peel the lime and use
¼ of it, just to have a little hint of citrus in your green juice. Remove the stem of
the fennel (the hart part inside) and use ¼ of it.
Juice the Kale first then the fennel, lime and at the end the apples so they sqeeze
out all the kale leaves.
Enjoy the foam and all the energy!
